Easter is one of my favorite holidays to host and cook.  It’s also the least complicated holiday meal I make.  Maybe it’s because of the warmer weather or maybe it’s because we start our day on the beach, but either way, I cook a delicious meal that I don’t spend all day preparing. 

During the cooler months it’s so cozy to be in the kitchen cooking away with a fire roaring.  But for Easter, I want uncomplicated recipes and ideas for an elegant but simple meal.  Delicious appetizers and side dishes, especially ones that can be prepared ahead of time are the name of the game for this holiday meal. 

Our Easter Sunday begins with sunrise service at the beach, then coffee and brunch at a local restaurant.  We head home for an egg hunt and meal prep starts.  Appetizers and delicious drinks poolside happen mid-afternoon and then we sit down for an early dinner and FEAST!

But enough of me blabbing…here are a few of my favorite recipes for Easter.
